V\u0161etky tieto l\u00e1tky potrebujeme na norm\u00e1lne fungovanie, ale samozrejme vo vyv\u00e1\u017eenom mno\u017estve. Ka\u017ed\u00fd z n\u00e1s m\u00e1 tie\u017e in\u00e9 potreby a \u017eivotn\u00e9 podmienky. Na to, \u010do a ako jeme, vpl\u00fdvaj\u00fa r\u00f4zne faktory ako pohlavie, chu\u0165 do jedla, pohybov\u00e9 n\u00e1vyky, vzdelanie, rodinn\u00e9 vz\u0165ahy, povolanie, zdravie, g\u00e9ny at\u010f. V\u0161eobecn\u00e9 rady v \u010dasopisoch alebo na internete preto zvy\u010dajne dlhodobo nefunguj\u00fa. V posledn\u00fdch rokoch sa v m\u00e9di\u00e1ch objavili takzvan\u00e9 FODMAPy (alebo spr\u00e1vnej\u0161ie &#8218;low-FODMAP&#8216;) di\u00e9ty a FODMAPy v strave boli ozna\u010den\u00e9 za mo\u017en\u00fdch vinn\u00edkov probl\u00e9mov s IBS (syndr\u00f3m dr\u00e1\u017ediv\u00e9ho \u010dreva), ako s\u00fa plynatos\u0165 a hna\u010dka. Ale \u010do s\u00fa to FODMAPy? V tomto \u010dl\u00e1nku vysvetl\u00edme, \u010do s\u00fa to FODMAPy a \u010do je d\u00f4le\u017eit\u00e9 vedie\u0165, ke\u010f ide o takzvan\u00e9 FODMAP di\u00e9ty (n\u00edzkofodmapov\u00e9 di\u00e9ty).<\/p>\n<h2>IBS a v\u00fd\u017eivov\u00e9 odpor\u00fa\u010dania<\/h2>\n<p>Probl\u00e9my s IBS sa u\u017e dlho viac \u010di menej \u00faspe\u0161ne lie\u010dia r\u00f4znymi di\u00e9tami. Je be\u017en\u00e9, \u017ee pacienti, ktor\u00fdm lek\u00e1r diagnostikoval IBS, dostan\u00fa aj odpor\u00fa\u010danie na n\u00e1v\u0161tevu dietol\u00f3ga, aby prehodnotil ich stravu. Vych\u00e1dzaj\u00fac zo stravovac\u00edch n\u00e1vykov ka\u017ed\u00e9ho \u010dloveka m\u00f4\u017ee dietol\u00f3g navrhn\u00fa\u0165 ur\u010dit\u00e9 \u00fapravy stravy, ktor\u00e9 by mali pom\u00f4c\u0165 zn\u00ed\u017ei\u0165 \u0165a\u017ekosti, napr\u00edklad plynatos\u0165, z\u00e1pchu, hna\u010dku, at\u010f. Be\u017en\u00e9 odpor\u00fa\u010dania sa t\u00fdkaj\u00fa pr\u00edjmu vl\u00e1kniny alebo vyh\u00fdbania sa ur\u010dit\u00fdm konkr\u00e9tnym potravin\u00e1m, \u010di potravinov\u00fdm zlo\u017ek\u00e1m. V poslednom \u010dase sa FODMAPy \u010dasto prezentuj\u00fa ako &#8222;r\u00fdchle rie\u0161enie&#8220; probl\u00e9mov s IBS. Existuj\u00fa dokonca aj tak\u00ed, ktor\u00ed pred\u00e1vaj\u00fa FODMAP potraviny a FODMAP poradenstvo alebo FODMAP di\u00e9ty r\u00f4zneho druhu. Ale funguje t\u00e1to n\u00edzkofodmapov\u00e1 di\u00e9ta naozaj? N\u00edzkofodmapov\u00e1 di\u00e9ta nevylie\u010di IBS, ale m\u00f4\u017ee pom\u00f4c\u0165 t\u00fdm, ktor\u00ed maj\u00fa v s\u00fa\u010dasnosti vysok\u00fd pr\u00edjem FODMAPov v strave.<\/p>\n<h2>Sacharidy: d\u00f4le\u017eit\u00e1 s\u00fa\u010das\u0165 na\u0161ej stravy<\/h2>\n<p>Sacharidy v strave m\u00f4\u017eu ma\u0165 r\u00f4zne formy. Najjednoduch\u0161ie sacharidy sa naz\u00fdvaj\u00fa jednoduch\u00e9 cukry alebo monosacharidy a patria medzi ne napr\u00edklad gluk\u00f3za a frukt\u00f3za. Dva monosacharidy m\u00f4\u017eu spolu tvori\u0165 tzv. disacharidy, medzi ktor\u00e9 patr\u00ed be\u017en\u00fd biely cukor (sachar\u00f3za) a lakt\u00f3za. Viac ako dva monosacharidy m\u00f4\u017eu tie\u017e vytv\u00e1ra\u0165 dlh\u00e9 re\u0165azce zlo\u017eitej\u0161\u00edch cukrov, ktor\u00e9 m\u00f4\u017eu by\u0165 aj r\u00f4zne rozvetven\u00e9. Tieto l\u00e1tky sa naz\u00fdvaj\u00fa polysacharidy (napr\u00edklad \u0161krob a celul\u00f3za). Mono- a disacharidy maj\u00fa sladk\u00fa chu\u0165 a telo ich \u013eahko vstreb\u00e1va ako energiu (r\u00fdchle sacharidy), zatia\u013e \u010do polysacharidy nemaj\u00fa sladk\u00fa chu\u0165 a vstreb\u00e1vaj\u00fa sa pomal\u0161ie alebo sa nevstreb\u00e1vaj\u00fa v\u00f4bec, ale prech\u00e1dzaj\u00fa dlhou cestou tr\u00e1viacim traktom (napr\u00edklad tzv. vl\u00e1knina).<\/p>\n<p>Jednoduch\u00e9 aj zlo\u017een\u00e9 cukry s\u00fa pre n\u00e1s ve\u013emi d\u00f4le\u017eit\u00e9. Dod\u00e1vaj\u00fa n\u00e1m energiu a pom\u00e1haj\u00fa k spr\u00e1vnemu tr\u00e1veniu. Je to v\u0161ak o rovnov\u00e1he a probl\u00e9my n\u00e1m m\u00f4\u017ee sp\u00f4sobi\u0165 tak pr\u00edli\u0161 ve\u013ea, ako aj pr\u00edli\u0161 m\u00e1lo sacharidov. Na\u0161a modern\u00e1 strava je v\u0161ak zvy\u010dajne bohat\u00e1 na sacharidy a probl\u00e9my spojen\u00e9 s nadmernou konzum\u00e1ciou s\u00fa ve\u013emi \u010dast\u00e9 (napr\u00edklad obezita).<\/p>\n<h2>\u010co s\u00fa to FODMAPy?<\/h2>\n<p>FODMAPy (fermentovate\u013en\u00e9 oligosacharidy, di-sacharidy, monosacharidy a polyoly) s\u00fa sacharidy s kr\u00e1tkymi cukrov\u00fdmi re\u0165azcami, ktor\u00e9 sa v \u010drev\u00e1ch nedaj\u00fa tak \u013eahko absorbova\u0165. M\u00f4\u017eu zv\u00fd\u0161i\u0165 vylu\u010dovanie tekut\u00edn do \u010dreva a bakt\u00e9rie (ktor\u00e9 pozn\u00e1me ako probiotik\u00e1) m\u00f4\u017eu vyu\u017ei\u0165 FODMAPy ako zdroj energie prostredn\u00edctvom ferment\u00e1cie (kvasn\u00e9ho procesu). Po\u010das ferment\u00e1cie sa tvoria kr\u00e1tke mastn\u00e9 kyseliny a plyny. \u00da\u010dinky FODMAPov s\u00fa prirodzen\u00e9 a vyskytuj\u00fa sa u v\u0161etk\u00fdch \u013eud\u00ed a pravdepodobne maj\u00fa aj svoju funkciu, ale u \u013eud\u00ed s IBS m\u00f4\u017eu sp\u00f4bova\u0165 tr\u00e1viace \u0165a\u017ekosti okrem in\u00e9ho zv\u00fd\u0161en\u00fa tvorbu plynov, a to nielen v pr\u00edpade, \u017ee strava je nadmerne bohat\u00e1 na FODMAPy.<\/p>\n<p>Na\u0161e stravovacie n\u00e1vyky sa l\u00ed\u0161ia, a to nielen medzi r\u00f4znymi kult\u00farami a krajinami. V Austr\u00e1lii sa vo v\u0161eobecnosti uk\u00e1zalo, \u017ee pr\u00edjem FODMAPov je vysok\u00fd, a tie\u017e sa podarilo preuk\u00e1za\u0165, \u017ee \u013eudia, ktor\u00ed zn\u00ed\u017eili pr\u00edjem FODMAPov, mali menej probl\u00e9mov s IBS.<\/p>\n<h2>R\u00f4zne FODMAPy<\/h2>\n<p>FODMAPy sa skladaj\u00fa z nieko\u013ek\u00fdch r\u00f4znych skup\u00edn fermentovate\u013en\u00fdch sacharidov. My \u013eudia ich nedok\u00e1\u017eeme rozlo\u017ei\u0165, preto\u017ee n\u00e1m na to ch\u00fdbaj\u00fa potrebn\u00e9 enz\u00fdmy. Preto zost\u00e1vaj\u00fa v \u010drev\u00e1ch a ich nadmern\u00e9 mno\u017estvo m\u00f4\u017ee sp\u00f4sobi\u0165 nepr\u00edjemn\u00e9 pocity. Disacharidy, ako je lakt\u00f3za, m\u00f4\u017eu by\u0165 FODMAPy, ale len vtedy, ak n\u00e1m ch\u00fdba dostato\u010dn\u00e9 mno\u017estvo enz\u00fdmu lakt\u00e1zy v pomere ku konzumovan\u00e9mu mno\u017estvu. Mno\u017estvo lakt\u00e1zy, a t\u00fdm aj na\u0161a tolerancia lakt\u00f3zy, sa l\u00ed\u0161i. Monosacharidy m\u00f4\u017eu by\u0165 tie\u017e FODMAPy, ak sa nedok\u00e1\u017eu vstreba\u0165 v dostato\u010dnej miere. Napr\u00edklad frukt\u00f3za sa m\u00f4\u017ee vstreb\u00e1va\u0165 v \u010dreve, ale jej transport z\u00e1vis\u00ed od pr\u00edtomnosti gluk\u00f3zy. Preto je potrebn\u00e9 zv\u00e1\u017ei\u0165 pr\u00edjem frukt\u00f3zy s in\u00fdmi potravinami s gluk\u00f3zou, aby sa zn\u00ed\u017eilo mno\u017estvo frukt\u00f3zy, ktor\u00e9 zost\u00e1va v \u010dreve. Upozor\u0148ujeme, \u017ee uveden\u00e9 potraviny obsahuj\u00fa ve\u013ea FODMAPov v Austr\u00e1lii, kde sa tento v\u00fdskum uskuto\u010dnil. Vzh\u013eadom na to, \u017ee ochucovanie a spracovanie potrav\u00edn sa l\u00ed\u0161i, obsah FODMAPov v t\u00fdchto potravin\u00e1ch m\u00f4\u017ee by\u0165 na Slovensku odli\u0161n\u00fd.<\/p>\n<p>Oligosacharidy (FOS a GOS) sa nach\u00e1dzaj\u00fa v ra\u017ei a ra\u017en\u00fdch v\u00fdrobkoch (napr. ra\u017en\u00fd chlieb), p\u0161enici a p\u0161eni\u010dn\u00fdch v\u00fdrobkoch (napr. p\u0161eni\u010dn\u00fd chlieb, cestoviny, kuskus, p\u0161eni\u010dn\u00e9 otruby), broskyniach, perzim\u00f3noch, mel\u00f3noch, arti\u010dokoch a r\u00f4znych strukovin\u00e1ch (fazu\u013ea a \u0161o\u0161ovica), cibuli, cesnaku.<\/p>\n<p>Disacharid lakt\u00f3za sa nach\u00e1dza v mlieku a jogurtov\u00fdch v\u00fdrobkoch.<\/p>\n<p>Monosacharid frukt\u00f3za sa v porovnan\u00ed s mno\u017estvom gluk\u00f3zy nach\u00e1dza v \u010dere\u0161niach, mangu, konzervovanom ovoc\u00ed, mel\u00f3ne, ovocn\u00fdch \u0161\u0165av\u00e1ch a su\u0161enom ovoc\u00ed, \u0161pargli, arti\u010dokoch, hr\u00e1\u0161ku, mede a kukuri\u010dnom sirupe.<\/p>\n<p>Polyoly, ako je sorbitol, sa nach\u00e1dzaj\u00fa v jablk\u00e1ch, hru\u0161k\u00e1ch (jablkov\u00e1\/hru\u0161kov\u00e1 \u0161\u0165ava), marhuliach, nekt\u00e1rink\u00e1ch a manitol sa nach\u00e1dza v karfiole, hub\u00e1ch a mel\u00f3ne.
